Ingredients
- 1 store-bought rotisserie chicken
- 1/4 cup hot sauce (recommended: Frank’s Red Hot)
- 1 teaspoon ground black pepper
- 1 3/4 cups sharp Cheddar
- 1/4 cup freshly sliced scallions
- 1 cups all-purpose flour
- 3 eggs, lightly beaten
- 2 cups panko bread crumbs
- Vegetable oil, for frying
- 1 1/2 cups mayonnaise
- 1/2 cup packed blue cheese, broken up
- 1/2 teaspoon hot sauce
- 2 teaspoons Worcestershire sauce
- 1 teaspoon salt
- 1/2 lemon, juiced
- 1 teaspoon chopped garlic
Instructions
- Have oil heated to 350 degrees F.
- Pick the meat from the chicken and discard the skin. Place the chicken in a large bowl and add the hot sauce, pepper, cheese, and scallions, and toss to combine. Roll the chicken into 2-ounce balls, about the size of a golf ball.
- Place the flour, eggs, and bread crumbs in 3 separate bowls. Roll each ball in the flour, then the egg and then the bread crumbs. Set aside.
- When the oil is hot fry the chicken balls in batches. Cook for about 2 minutes per batch. Remove the chicken to paper towel lined plate to drain the excess oil.
- To make the sauce, combine all ingredients in a large bowl and adjust the seasoning if necessary. Serve the chicken alongside the dipping sauce.

This recipe is the best!! Mine came out more like tennis balls than golf ball size but still taste great.
This is a great baseline recipe for these – but I gotta say, be unafraid of seasoning my fellow Americans. I doubled the amount of Franks and black pepper this recipe called for, and added two tbsp of garlic powder, a tbsp of cayenne, a tbsp of smoked paprika, and a 2 tsps of oregano – while keeping all the other ingredient ratios the same. Turned out wonderful with that extra zip.
This is one of our family’s favorite recipes and we’ve made it countless times. It is a lot of work though at least for me as someone with arthritis. Everyone raves about these and they even keep very well in the fridge too.
I’d love to meet the person and find out their secrets to prepping these in 20 minutes because it takes me about an hour to pick and shred a whole chicken , mix, roll the balls, then bread them all. They’re worth it though!

Yes, and have used a deep fryer. Can these be done in an air fryer? And if so at one temp and timing.
I made this and they were gone in seconds. The second time I made them I doubled the batch and made them smaller. They were gone in minutes. Great appetizer for game day or the hollidays!

These are really great! I was dubious about the balls staying together, but they did. I made ours smaller so that the grandkids could just pop them into their mouths. I didn’t make the blue cheese dressing as I had a whole bottle here, but I’m sure it’s good. Everything Aaron makes is good. Wish he was still on!!!
