Ingredients

  1. One 16-ounce bag frozen sweet potato tots or puffs
  2. 2 cups shredded rotisserie chicken
  3. 1/2 cup plus 2 tablespoons BBQ sauce
  4. 1 1/2 cups shredded extra-sharp Cheddar
  5. 2 scallions, sliced on the bias

Instructions

  1. Cook the sweet potato tots according to the package instructions.
  2. Preheat the broiler to high.
  3. Put the cooked tots in an even layer on a parchment-lined baking sheet and sprinkle with the shredded chicken. Pour 1/2 cup BBQ sauce evenly over the top and cover with the cheese. Broil until the cheese is melted and bubbly, 3 to 4 minutes.
  4. Drizzle with the remaining 2 tablespoons BBQ sauce and garnish with fresh scallions. Serve immediately.

Recipe was easy and delicious. Plus, with it only being a few ingredients, it was a great meal for a weeknight! Also, I almost made it with regular tater tots instead of sweet potato and I’m so glad I didn’t because there is something about the sweet potato and the barbecue sauce that makes this taste even better than I thought. Since sweet potatoes are already sweet, I definitely wouldn’t go for a sweet barbecue sauce – I think a tangy, spicy one works GREAT here!
