Ingredients
- One 16-ounce bag frozen sweet potato tots or puffs
- 2 cups shredded rotisserie chicken
- 1/2 cup plus 2 tablespoons BBQ sauce
- 1 1/2 cups shredded extra-sharp Cheddar
- 2 scallions, sliced on the bias
Instructions
- Cook the sweet potato tots according to the package instructions.
- Preheat the broiler to high.
- Put the cooked tots in an even layer on a parchment-lined baking sheet and sprinkle with the shredded chicken. Pour 1/2 cup BBQ sauce evenly over the top and cover with the cheese. Broil until the cheese is melted and bubbly, 3 to 4 minutes.
- Drizzle with the remaining 2 tablespoons BBQ sauce and garnish with fresh scallions. Serve immediately.

Recipe was easy and delicious. Plus, with it only being a few ingredients, it was a great meal for a weeknight! Also, I almost made it with regular tater tots instead of sweet potato and I’m so glad I didn’t because there is something about the sweet potato and the barbecue sauce that makes this taste even better than I thought. Since sweet potatoes are already sweet, I definitely wouldn’t go for a sweet barbecue sauce – I think a tangy, spicy one works GREAT here!
