Ingredients
- 8 bay leaves
- 2 teaspoons dried thyme
- 1 teaspoon black peppercorns
- 2 teaspoons sea salt
- Extra-virgin olive oil
- 1 lemon, halved
- 1 chicken (3 to 5 pounds)
- 1 head garlic, cut in half crosswise
Instructions
- Preheat the oven to 400 degrees F.
- Combine the bay leaves, thyme, peppercorns and salt in a spice grinder and grind to medium fine. Combine with 2 tablespoons olive oil in a small bowl.
- Stuff the chicken cavity with the lemon halves. Rub the outside of the bird with the spice paste.
- Drizzle a roasting pan with a few tablespoons of oil. Place the bird and the garlic halves, cut-side down, in the pan.
- Roast until the juices run clear at the inner thigh, about 2 hours.
- Let the bird rest for 20 minutes before serving.

Really yummy, made this for dinner. Was really flavorful. I enjoyed the bay flavor. I made 3 chickens. All the same except for 1 of them I added freash thyme to the cavity. I liked it a bit more but i lllooovveee thyme. But don’t think you need it the bay only chickens were delicious and very much liked by my family and friends.
The idea of pulverizing bay leaves is such a new concept for me, and I’m a pretty good cook, but WOW! what flavor! amazing. Please keep this series and this type of programming (local, seasonal) going. PLEASE!
I just saw this show for the first time……enjoyed it immensely. Hope to try that Bay Roasted Chicken, too. I’ve always had problems getting a whole chicken cooked through evenly.
