Slow Cooker Chicken Chili

Ingredients

  1. 2 pounds ground chicken, coarsely ground preferred
  2. 3 tablespoons chili powder, plus 2 teaspoons
  3. 1 (15-ounce) can kidney beans, drained and rinsed
  4. 1 (15-ounce) can white beans, drained and rinsed
  5. 2 (28-ounce) cans diced fire roasted tomatoes
  6. 1 medium sweet potato (about 10 ounces), peeled and shredded
  7. 1 (15-ounce) can low-sodium chicken broth
  8. 1/4 cup instant tapioca (recommended: Minute tapioca)
  9. 1 to 2 chipotle chiles in adobo sauce with seeds, chopped
  10. 2 tablespoons soy sauce
  11. 1 tablespoon kosher salt
  12. 1 tablespoon onion powder
  13. 2 teaspoons granulated garlic
  14. 1 teaspoon dried oregano
  15. 1 teaspoon ground cumin
  16. 1/4 teaspoon ground cinnamon
  17. Pinch ground cloves
  18. 1/2 to 3/4 cup lager-style beer, optional
  19. Toppings: Sour cream, shredded Cheddar or Jack cheese, chopped scallions, and chopped pickled jalapenos

Instructions

  1. Put the chicken in the slow cooker. Add 3 tablespoons of the chili powder and all the rest of the ingredients, except the beer. Stir everything together, cover, and cook on LOW for 6 to 8 hours.
  2. Just before serving, stir in the remaining 2 teaspoons of chili powder, the beer, if using, and season with more salt and pepper, to taste, if desired. Divide the chili among warm bowls. Serve with the topping of your choice.
  3. Know-How: Stirring in chili powder right before serving brightens the flavor of the chili.

This is a really good chili recipe! I would have given this 5 stars, except that it was really the reviewers suggestions that took this from a 4 star to a 5+ star recipe. I took several of the suggestions: 1. Brown the chicken 1st. 2. Added green pepper (I also added onion and sauteed before adding to the crockpot). 3. Reduce the amount of broth (I actually used wine white instead of chicken broth), so it wasn’t runny – I prefer a “thicker” chile, so I also added a little more tapioca.

I would suggest you give this recipe a try – you will like it!

Absolutely the worst! I ate my bowl only because I hate to waste. My adult children didn’t like it either. And SO much left over… that went down the disposal. I followed the recipe exactly without the beer, which was optional.

I just tried this based on the recipe and all the great reviews – I don’t like spicy so I used 3T smoked paprika instead, didn’t use beer, the sweet potato or tapioca (which probably would have thickened it) or cloves or oregano.  I did add a can of black beans.  I also am not a fan of canned tomatoes so I went with a can of tomato sauce that was pre-seasoned with cilantro, onion and garlic.  As others have tried, I went with chicken breasts and cut it into cubes.  I let it cook for about 7 hours and 15 minutes, stirring maybe 2-3 times during the day.  Yes, it was more soupy than thick but wow the flavor was amazing. I had a little white rice on the side and added some guac and light sour cream on top and couldn’t stop eating it.  Not sure about serving sizes because if this makes 6-8, there’s tons left and I seriously just ate a huge amount.  I also only used 1/2 T salt and low sodium soy.  Was really easy and so flavorful!

Delicious!! Brought some to work and my co-workers loved it, too. I didn’t use the tapioca or beer and I used chicken breasts (shredded when done) instead of ground chicken. Amazing!

I’ve probably made this chili 20 times – it’s so yum! We use thighs and don’t like spice so just 1 chipotle pepper for taste, 1 Tb chili powder and add 1Tb smoked paprika. I also add cornmeal instead of tapioca. The sweet potato is the secret ingredient!

All the flavors came out very good… I wasn’t sure at first based on other reviews. *I did only two tablespoons of chili powder and that was plenty, also skipped adding beer.
I would make it again but for sure would do chicken breasts and shred them. The ground chicken just doesn’t seem right for the slow cooker and chili.

Tasted pretty good but holy salt! 1 tablespoon of salt & 2 tablespoons of soy sauce?? Maybe 1 tablespoon of soy sauce & skipping the salt would do.

Tried it… Was ok… Very soupy texture and consistency.

Never had chili really, so can’t compare it to anything…
Probably would use chicken breasts vs ground chicken if I make this again.
Very very soupy and liquid consistency. Would have liked it to be firmer and more solid…
Anyone know how big a serving itself is? Says it serve 6-8 people, but exactly how big is a serving when looking at the calorie count provided in nutrition info.
