Marinated Chicken Breast with Arugula

Ingredients

  1. 1/4 cup olive oil
  2. 1 tablespoon Meyer lemon zest plus 2 tablespoons juice, plus 1 Meyer lemon, halved, for garnish
  3. 2 tablespoons white wine vinegar
  4. 1 tablespoon Dijon mustard
  5. 1 tablespoon chopped fresh tarragon
  6. 1 teaspoon honey
  7. Kosher salt and freshly ground black pepper
  8. 2 boneless skinless chicken breasts, pounded to 1/2-inch thickness
  9. 2 cups baby arugula
  10. 1/4 cup shaved Parmesan

Instructions

  1. Whisk together the oil, lemon zest and juice, vinegar, mustard, tarragon, honey, 1/4 teaspoon salt and some pepper in a medium bowl. Place the chicken in a large resealable bag and pour in half of the dressing. Seal the bag and allow the chicken to marinate in the fridge for at least an hour. Reserve the remaining dressing for the arugula.
  2. Preheat a grill to medium high. Remove the chicken from the marinade, season with some salt and pepper and grill until cooked through, 3 to 4 minutes per side. Grill the lemon halves cut-side down until grill marks appear, about 6 minutes. Transfer the chicken and lemon to a platter.
  3. Pour the remaining dressing over the arugula and toss to coat. To serve, place 1 chicken breast on each plate and top with the arugula, a sprinkling of Parmesan and a grilled lemon half.

This chicken dish is DELICIOUS! I watched Valerie make it yesterday on her show and knew I had to try it. The only change.. I used a regular lemon… I don’t think it made a difference. I agree with Jill. This chicken is awesome! I am so bored with chicken, but the marinade was full of flavor, even without garlic. I used regular lemons, no Meyers here. Simple, quick and great!

This chicken is INCREDIBLE! I saw Valerie make it on her show over the weekend, and it looked so good that I thought I’d give it a try. To be honest, as I was preparing the marinade, I started second-guessing whether it was going to be as flavorful as it appeared on TV, just because of how simple it was. I was proven SO wrong. It was absolutely delicious! I butterflied my chicken breasts and marinated them for about an hour. (I also reserved just a bit of the marinade to baste on my chicken at the end.) The flavor was phenomenal and it was probably the juiciest chicken I’ve ever made. My whole family loved it, even my 3 and 6 year old, and that’s a pretty big compliment! I would absolutely recommend this recipe! I followed it exactly, except that I didn’t have Meyer lemons, so I just used a regular lemon and added a bit more honey for a little extra sweetness. Eight thumbs up in this house!
