Ingredients

  1. 2 pounds boneless, skinless chicken breast, cubed
  2. 1/4 cup olive oil vinaigrette or Italian salad dressing
  3. 1/2 cup diced carrots
  4. 1/2 cup diced yellow onion (white will do)
  5. 1/3 cup diced tomato
  6. 1/3 cup diced colored peppers (add jalapeño if spicy is desired)
  7. 1/3 cup sliced mushrooms
  8. Cooked long-grain rice, for serving

Instructions

  1. In a large skillet on medium-high heat, add the chicken, dressing, carrots and onions.
  2. Sauté until the chicken is almost fully cooked (when pieces are no longer soft and pink).
  3. Add the tomato and stir for 1 to 2 minutes. Add the peppers and mushrooms and mix for 1 minute.
  4. Serve with the rice.
