Ingredients
- 1 large russet potato, peeled and cut into 1-inch chunks
- 1 pound broccoli florets
- 1/2 cup chicken broth
- 4 ounces cream cheese
- 1/4 cup freshly grated Parmesan
- Salt and freshly ground black pepper
Instructions
- Fill a large pot with enough water to come 2 inches up the sides of the pot. Set a steamer rack in the pot, cover, and bring the water to a boil over high heat. Add the potato chunks and cook until they are very tender, about 18 minutes. Transfer the potatoes to a medium bowl and mash until smooth.
- Place broccoli into steamer rack and steam over medium heat until the broccoli is very tender, about 12 minutes. Transfer the broccoli to the bowl of a food processor. Add the broth, cream cheese, and Parmesan. Process until the broccoli is pureed and almost smooth.
- Stir the broccoli puree into the mashed potato and blend well. Season the puree to taste with salt and pepper, and serve.

Made it without the potatoes. Delicious. Steamed the broccoli in chicken broth which I added as needed to food processor.
So delicious! My husband and I loved it, the kids ate it and did not mention “no do-overs please”, and I passed this to my sister who’s husband devoured it. Highly recommend.
SOOO glad to have this recipe, as I cook for several people in my house that have very restrictive diets. 1 has a pureed food only diet, and 2 others are elderly and eat very little amounts, and almost no veggies. To make it into a main dish for then I add 2 slices of thin sliced Bores head turkey or chicken. (Or left over meat, plus 2-3 pieces of cooked crumbled bacon to the food processor. That way they are getting meat, starch, and veggies.To make it even more eye pleasing, I sometimes stuff it into a hallowed potato skin & top with parm cheese and butter (or cheddar and butter then broil for a few minutes. Their ” dinner” is complete….works for me :
Both my husband and I really liked it. I think it could’ve used even more cream cheese. It was a perfect combination of flavors. This will become a staple at my house!
So creamy and delicious! I like to add more cheese! I have used lo fat cream cheese and Romona as substitutions. Also garlic adds some kick.

this was FANTASTIC!! i used frozen broccoli flourets and steamed them together with the potato to save time and they cooked completely evenly! It comes out to be such a pretty color green too!! This is my new favorite way to eat broccoli!!
This was so delicious! I mixed it up a little because I used what I had on hand and I read some other reviews. I used 5 red potatoes skin on, it added some texture and color. I also added 3 cloves of minced garlic. The consistency was so good and you get a great taste of potatoes and broccoli. Will definitely use this again!
I absolutely love this recipe. To make it healthier I used vegetable stock and cut the cream cheese in half or use a 1/3 less fat version. It still tasted the same, yummy.

Substitute mascarpone cheese for cream cheese for a lighter but just as flavorful dish. Leave out the potato if you’re carb-conscious. Add a few minced garlic cloves. This is a terrific dish. Highly recommended.
