Pumpkin Cheesecake Bars

Ingredients

  1. 1 (16 oz.) pkg. pound cake mix
  2. 3 large eggs
  3. 2 tbsps. butter, melted
  4. 4 tsps. pumpkin pie spice, divided
  5. 1 (8 oz.) pkg. cream cheese, softened
  6. 1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
  7. 1 (15 oz.) can pumpkin (about 2 cups)
  8. 1/2 tsp. salt
  9. 1 cup chopped nuts

Instructions

  1. HEAT oven to 350 degrees F. Combine cake mix, 1 egg, butter and 2 teaspoons pumpkin pie spice in large bowl until mixture resembles coarse crumbs. Press into bottom of 15 x 10-inch jellyroll pan.
  2. BEAT cream cheese in large bowl until fluffy. Gradually beat in sweetened condensed milk; beat in remaining 2 eggs, pumpkin, remaining 2 teaspoons pumpkin pie spice and salt; mix well. Pour over crust; sprinkle with nuts.
  3. BAKE 30 to 35 minutes or until set. Cool. Chill. Cut into bars.

I made them for a potluck and people liked them, but, full disclosure…I added a drizzle of homemade caramel sauce topped with a sprinkling of sea salt. Then topped each bar with a small dollop of whipped cream. 

I thought the crust was next to impossible to work with…it stuck to my hands, buttered or not, something awful. It is also far too sweet, and didn’t bake thoroughly. Further I didn’t taste cheesecake at all. Very disappointing as far as taste of the filling. I would not make them again.

These were soooooo good. They were very easy to make. I didn’t have a 10 x 15 jelly roll pan so I used a 9 x 13 glass baking dish instead and they still came out wonderful. These will definately be replacing pumpkin pie on Thanksgiving. Highly recommended.

These bars are delicious! Super easy to make, and not too many ingredients. I made a batch and they finished so fast that I made more the next day. I will definately make these every year for Thanksgiving.
