Maple Bacon Double Cheeseburgers

Ingredients

  1. 3 pounds ground beef chuck
  2. Vegetable oil, for the grill
  3. 12 slices bacon, halved
  4. 3 tablespoons pure maple syrup
  5. Coarsely ground pepper
  6. 6 sesame hamburger buns, split
  7. 1/4 cup mayonnaise
  8. 2 tablespoons ketchup
  9. 2 teaspoons spicy brown mustard
  10. 1 teaspoon Louisiana-style hot sauce
  11. Kosher salt
  12. 12 slices colby jack cheese
  13. Pickle chips, for topping

Instructions

  1. Form the ground beef into 12 thin patties, about 4 1/2 inches wide. Place on a baking sheet and refrigerate for at least 30 minutes to firm up. Preheat a grill to high and lightly oil the grates.
  2. Meanwhile, put the bacon in a large nonstick skillet (it’s OK if the slices overlap — they’ll shrink). Turn the heat to medium and cook, turning occasionally, until browned and crisp, 15 to 20 minutes. Remove the bacon to a plate. Pour the drippings into a bowl and reserve. 
  3. Return the bacon to the skillet in a single layer. Drizzle with the maple syrup and sprinkle with 1 teaspoon pepper. Cook over medium heat, turning the bacon to coat in the syrup, until glazed, about 1 minute; remove to a plate to cool. Brush the cut sides of the buns with some of the bacon drippings. Mix the mayonnaise, ketchup, mustard and hot sauce in a small bowl. 
  4. Season the patties with salt and pepper on both sides. Working in batches, grill the patties until marked on the bottom, 2 minutes, then flip and top each with a slice of cheese. Cover and cook 30 more seconds for medium doneness. Toast the buns on the grill.
  5. Assemble the burgers: Spread the mayonnaise sauce on the buns. Fill with the pickles, patties (2 per burger) and bacon.

This looks and sounds amazing! My husband won’t eat mayonnaise or mustard. Is there anything else you can suggest that I can use to make the sauce? I love the idea of the hot sauce to help bring out the flavor, but I just need another suggestion for what to put the hot sauce in.

I did this today. The maple syrup bacon really makes burgers. Here’s a tip, my wife bought regular ground beef instead of chuck, make sure you flatten the patties to steak and shake style otherwise they plump too much and make double burger difficult to build and more difficult to eat. Another tip, don’t crowd bacon in skillet because they stick to each other. Cook a few strips at a time. I cooked bacon a few strips at a time and put on a grill griddle to keep warm. Instead of putting back in skillet drizzled syrup while bacon on griddle. The mustard, ketchup and hot sauce spread is very good. Very easy to make.
