Ingredients
- Cooking spray or butter, to grease
- Two 11-ounce cans Mexican corn, drained
- Two 4.5-ounce cans chopped green chiles, drained
- 2 cups grated Monterey Jack cheese (about 8 ounces)
- 2/3 cup grated Parmesan
- 1 cup mayonnaise
- Corn chips, for dipping
Instructions
- Preheat the oven to 350 degrees F. Grease a 9- 13- by 2-inch casserole dish. In a medium bowl, mix the corn, chiles, cheeses and mayonnaise until fully combined. Spread the mixture in the prepared casserole dish and bake, uncovered, until bubbly around the edges, 30 to 40 minutes. Serve the dip warm from the oven with corn chips.

This recipe is so great, it reminds me of my dad’s Mexican Street Corn SO GREAT
All I can say is “oh my God this is great”. I made a recipe batch and added jalapeño as she recommended on the show foe the folks that like the heat.
Thought it would be a great appetizer for our Mexican dinner ( 3 families). No one liked it- so we tossed it.Not making it again.
Made it last night with a few adjustments:
– swap out 2-3 tablespoons of Mayo with sour cream
– a few shakes – 1/4 tablespoon of chili powder
– a few shakes of smoked paprika
– – a few grinds of black pepper 1/2 teaspoon
– a shake or two of Old Bay
