Chili Cheese Dip with Biscuit Dippers

Ingredients

  1. 1 pound ground sirloin beef
  2. One 16-ounce jar salsa (I use medium heat)
  3. 1 packet taco seasoning
  4. 2 cups shredded Cheddar
  5. 4 ounces cream cheese, cut into cubes
  6. 1 can biscuits
  7. Garlic salt, as needed
  8. 1 tablespoon melted butter
  9. 2 tablespoons thinly sliced scallions

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a medium ovenproof skillet over medium heat, brown the beef, 5 to 8 minutes. Add the salsa and taco seasoning. Bring to a simmer, lower the heat and cook on low, stirring occasionally, for about 5 minutes. Turn the heat to very low and stir in the Cheddar and cream cheese until just melted. Remove from the heat.
  3. Cut the biscuits into quarters and roll into balls. Arrange the biscuit balls around the perimeter of the chili in the skillet so that each ball is touching. Mix a sprinkle of garlic salt into the melted butter and use a pastry brush to brush over the tops of the biscuits. 
  4. Bake until the biscuits are golden brown, about 20 minutes. Garnish with the scallions and serve hot.

This was just so-so for us. We drained the meat after cooking and then proceeded with the recipe. After baking there was a layer of oil on top. We spooned it off. I thought it was too salty. Won’t make again.

This dip was the hit of my recent cocktail party.  I was afraid it tasted too salty, but no one thought so.  I wasn’t sure about the biscuits, but they added a unique element to the appetizer.  They got a little soggy during the evening, but it wasn’t a turn off.  Some folks ate the dip with corn chip scoops, which also tasted great.

I made this for a holiday party and it was a huge hit. I used the big can of biscuits. I had some left over so I just put another row of biscuits on top of the dip. Loved this recipe! I’ll be making this again.

Made this for Super Bowl and it was a big hit. I used the large can of Grands biscuits and a 12″ cast iron pan. I had a few biscuit pieces left over after arranging them around the edge of the pan, so I arranged them in the middle. I wouldn’t change anything in the recipe, it was great as is.

I added a can of drained seasoned black beans. I also topped with a handful of chopped lettuce and diced tomatoes. I put a bowl of Fritos scoops out nearby, since it made so much. It was a huge hit at our super bowl party, and fed plenty of people. No one could believe how easy it was. Delicious!
