Baked Cambozola with Pecans and Cranberries

Ingredients

  1. 1/2 cup roughly chopped pecans
  2. 1/2 cup dried cranberries
  3. 2 teaspoons packed light brown sugar
  4. 1/4 teaspoon curry powder
  5. Kosher salt
  6. 1 pound Cambozola cheese, rind removed, cubed
  7. Sliced pears and/or crackers, for serving

Instructions

  1. Preheat the oven to 400 degrees F. Combine the pecans, dried cranberries, brown sugar, curry powder and a pinch of salt in a medium bowl.
  2. Put the cheese in a 1-quart baking dish and top with the pecan mixture. Bake until the cheese melts and the nuts are toasted, about 12 minutes. Serve with sliced pears and/or crackers.

I can’t say enough good things about this recipe.  I made it for our last girls night get together.  It’s absolutely amazing.  It does make a lot so I may need to invest in a bigger brie type baker.  If you like blue cheeses you will LOVE this!
