Ingredients
- One 8-ounce tube refrigerated crescent rolls
- 1 tablespoon Dijon mustard
- One 10-ounce box frozen chopped spinach, thawed and squeezed dry
- 4 ounces sharp Cheddar, grated
- 1/4 cup chopped scallions (about 4)
- 1/4 cup diced roasted red peppers (about 1 pepper)
- Kosher salt
Instructions
- Preheat the oven to 350 degrees F and line an 18-by-13-inch baking sheet with parchment paper.
- Unroll the crescent dough (do not separate into individual pieces) and pat into an 8-by-12-inch rectangle, gently pressing the seams closed. Brush evenly with the mustard and then then top with the spinach, Cheddar, scallions and peppers, leaving a 1/2-inch border all the way around. Sprinkle with 1/2 teaspoon salt.
- Starting with a short side, roll the dough sheet into a log. Slice into 8 pinwheels and transfer to the prepared baking sheet. Bake until golden, 18 to 20 minutes.

Very festive and tasty recipe for Christmas! I went a little light on the ingredients to avoid it falling apart, and they turned out perfect!
I tried this tonight at a friends house for a appetizer before dinner. Bought a cheap version of the crescent rolls and that seemed to have some problem staying together. Tried to follow recipe to the letter, but thinking 1 whole red bell pepper was too much and maybe too much cheese. Was a mess to try to roll. Ended up making it as a flat bread and turned out very nice. Think I will buy a better quality crescent roll or some type of pizza crust and keep it a flat bread. a little more seasoning as well as maybe fresh or bag spinach instead of frozen. Great idea that I had to tweek to make right for me. Obviously from past experience most people can do this roll-up trick with no problem, but for some reason I can’t! 🙂
