Instructions

  1. Beat 4 ounces softened cream cheese and 1/4 cup mayonnaise with a mixer until combined. Add 8 ounces grated sharp white cheddar and 1 teaspoon garlic powder and mix until combined. Gently stir in 1 diced roasted red pepper. Season with salt and pepper.

This is delicious. Leave it to Demaris to nail a uniquely old school Southern recipe. (I guess I have to include the fact that I used a bit of grated garlic instead of the garlic powder, but it’s just a technicality, really.) It was so quick and easy that I’ll be making this recipe a lot for appetizers in the future. Just yummy and fun. Takes me back a bunch of decades!

This is way too garlicky.  I love garlic and have been eating pimento cheese all my life, but this needs about half the garlic that is listed.  Otherwise, it’s tasty.

Its a Southern recipe and taste.  Everyone in the South eat it and love it.  It is strange to others, but, it is delicious on baguettes, crustini’s, and even just as a sandwich or on grilled cheese!  YUM!!  We add more cheddar cheese and more garlic!  But, its an aquired taste kinda like Pate’!  LOL
