Pimento Cheese French Bread Pizza

Try this pimento cheese-pizza mashup the next time you’re looking for a fun, full-flavored snack. Spread pimento cheese on a sliced baguette, top with pepperoni and mozzarella then bake until browned and bubbly. The spice from the cheese is a perfect pairing with pepperoni. It would work equally well with any of your other favorite pizza toppings.

Ingredients

  1. 2 ounces cream cheese, at room temperature
  2. 3 tablespoons mayonnaise
  3. 1/4 teaspoon onion powder
  4. 1/8 teaspoon cayenne pepper
  5. Kosher salt and freshly ground black pepper
  6. 4 ounces extra-sharp Cheddar cheese, grated
  7. 2 tablespoons drained diced pimentos (about half of a 4-ounce jar)
  8. 1 baguette
  9. 3 ounces sliced pepperoni (slices halved or quartered if large)
  10. 2 cups shredded mozzarella cheese
  11. 2 tablespoons finely chopped fresh parsley
  12. Grated Parmesan cheese, for topping

Instructions

  1. Preheat the oven to 450 degrees F. Line a baking sheet with foil or parchment paper. Mix the cream cheese, mayonnaise, onion powder, cayenne and a small pinch each of salt and black pepper in a medium bowl. Stir in the Cheddar and pimentos until well combined; season with more salt and black pepper, if needed.
  2. Halve the baguette lengthwise, then cut each piece in half crosswise. Spread the pimento cheese on the cut side of each baguette piece, spreading it to the edge. Arrange on the baking sheet and top with the pepperoni, then the mozzarella.
  3. Bake until the bread is toasted around the edges and the cheese is melted and bubbly, about 12 minutes. Let cool slightly. Sprinkle with the parsley and Parmesan. Cut into pieces.
