Ingredients

  1. 3/4 Lb bulk chorizo
  2. Vegetable oil as needed
  3. 1 small onion, chopped
  4. 1 tablespoon butter
  5. 3 eggs
  6. 1 T water
  7. Salt to taste
  8. Salted tortilla chips
  9. 6-8 oz. mild cheddar cheese
  10. Sabra Classic or Homestyle Salsa

Instructions

  1. 1.) PREHEAT oven to 350 F.
  2. 2.) SAUTE chorizo over medium heat. Remove the chorizo from the skillet with a slotted spoon and drain it.
  3. 3.) REDUCE heat to medium-low and add onion. Saute the onion for about 10 minutes, until soft and reserve.
  4. 4.) MELT butter in a shallow, medium baking dish in the oven.
  5. 5.) WHISK eggs, chorizo, water and salt in a bowl. Remove the baking dish from the oven and pour the eggs into the warm dish.
  6. 6.) TOP eggs with enough chips to make a single dense layer
  7. 7.) SCATTER onions and cheese over the chips.
  8. 8.) BAKE for 5-8 minutes, or until the eggs are set lightly and the cheese is melted.
  9. 9.) TOP with your favorite Sabra Salsa and serve immediately.
