Fried Ice Cream with Cereal Crust

Ingredients

  1. 10 cups corn flakes, crushed
  2. 1 cup coconut flakes
  3. 8 tablespoons (1 stick) unsalted butter, melted
  4. 2 tablespoons granulated sugar
  5. 2 teaspoons cinnamon
  6. 1 quart vanilla ice cream
  7. 1 quart strawberry ice cream
  8. 1 quart chocolate ice cream
  9. Fried Sweet Dough, recipe follows
  10. Chocolate sauce, for serving
  11. 2 quarts (8 cups) canola oil
  12. 2 sheets prepared croissant dough, cut into 2-inch squares
  13. 1 cup confectioners’ sugar
  14. 2 tablespoons cocoa powder

Instructions

  1. Preheat the oven to 325 degrees F.
  2. Combine the corn flakes, coconut flakes, butter, granulated sugar and cinnamon on a large baking sheet and bake until golden and crisp, about 8 minutes.
  3. Use a 2-inch scoop to scoop 4 balls from each flavor of ice cream. Roll to coat the balls in the corn flake mixture on all sides and freeze for at least 30 minutes and up to overnight.
  4. Serve the ice cream with the Fried Sweet Dough and drizzle with chocolate sauce.
  5. Heat the oil in a large Dutch oven or heavy high-sided pot to 350 degrees F.
  6. Working in batches, fry the dough pieces until puffed and golden, about 1 minute. Remove with a slotted spoon and drain on a towel-lined plate.
  7. In a medium bowl, whisk together the confectioners’ sugar and cocoa and sprinkle over the fried dough.

I haven’t made Nancy’s recipe yet, but can’t wait to!  It looks fantastic!  I saw this on one of her shows and came here to look up the recipe.  I like the addition of the croissant dough, to make it a complete dessert.

These were really good, I made them with some home churned ice cream I had in the freezer, my family liked them! It’s not how I’d want to serve ice cream all the time but I loved the topping. I didn’t serve them with anything fried, it wasn’t necessary the crispy ice cream balls stand alone!
