Try this crunchy and refreshing celery root salad with a kick from radishes, Dijon and a bit of cayenne.

Ingredients

  1. 2 bulbs celery root (about 1 1/2 pounds), peeled and quartered
  2. 1 bunch radishes (about 6), trimmed
  3. Finely grated zest and juice of 1/2 lemon
  4. 1/2 cup mayonnaise
  5. 1/4 cup sour cream
  6. 2 tablespoons Dijon mustard
  7. 1/8 teaspoon cayenne
  8. Kosher salt and freshly ground black pepper
  9. 1/4 cup fresh flat-leaf parsley leaves, roughly chopped
  10. 2 scallions, white and green parts, thinly sliced

Instructions

  1. Coarsely shred the celery root and radishes into a large bowl and immediately toss with the lemon zest and juice. Stir in the mayonnaise, sour cream, mustard, cayenne, 3/4 teaspoon salt and a few grinds of pepper. Transfer to a serving dish and scatter the parsley and scallions over top. Serve.
