Crispy Broccoli and Cauliflower

Ingredients

  1. 2 heads broccoli, cut into 2-inch florets
  2. 1 small head cauliflower, cut into 2-inch florets
  3. 3 tablespoons olive oil
  4. 1 1/2 teaspoons kosher salt
  5. 1 teaspoon sweet curry powder

Instructions

  1. Position a rack in the top third of the oven. Preheat the oven to 450 degrees F.
  2. On a rimmed baking sheet, toss together the broccoli, cauliflower, olive oil, salt and curry powder. Spread evenly on the tray and roast for 25 minutes, flipping the vegetables halfway through. Serve warm or at room temperature.

Wow the curry is an awesome touch! I added a little Parmesan cheese and still kept it Keto. The cheese added a little salty flavor which was nice. I will definitely be cooking this recipe again ans I will be trying it with different vegetables.
