Chili Lime Cauliflower with Smokey Mayo

Ingredients

  1. 1 large head cauliflower, broken into florets
  2. 2 tablespoons olive oil
  3. 1 tablespoon chile-lime seasoning, such as Tajin
  4. 2 teaspoons ground cumin
  5. 1/2 teaspoon kosher salt
  6. 1/4 teaspoon freshly ground black pepper
  7. 1 cup mayonnaise
  8. 1 tablespoon honey
  9. 1/2 tablespoon smoked paprika
  10. 1/4 teaspoon kosher salt
  11. 2 cloves garlic, pressed
  12. 1 lime, juiced
  13. 1 canned chipotle pepper, chopped, plus 1 tablespoon adobo sauce from the can
  14. 2 scallions, sliced thinly

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Place the cauliflower florets on a sheet pan. Drizzle with the oil and sprinkle with the chile-lime seasoning, cumin, salt and pepper. Toss to coat and bake until the cauliflower is roasted and browned, about 25 minutes.
  3. For the smokey mayo: Meanwhile, make the sauce by adding the mayonnaise, honey, smoked paprika, salt, garlic, lime juice, chipotle pepper and adobo sauce to a bowl. Whisk together until smooth and incorporated.
  4. Remove the cauliflower from the oven and transfer to a platter. Drizzle the sauce over the top and garnish with the scallions.

So delicious! I put my cauliflower and spices in a gallon bag and shook it together for a better coating instead of on the tray. The only part I got confused on was chilli and adobo amount because there are different sized cans. I bought a 7 oz. can and removed the chillies and diced them up first and then added the 1 TBS of sauce and that was enough! I would maybe add cojita cheese on top next time because it reminded me of a spicy elote. Saving my left over sauce to marinaded chicken tonight!
