Yield: 6 servings

Ingredients

  1. 1 large head cauliflower (about 3 pounds), trimmed and cut into florets
  2. 3 tablespoons olive oil
  3. 3/4 teaspoon ground mustard
  4. 3/4 teaspoon sweet paprika
  5. 1/2 teaspoon garlic powder
  6. 1/2 teaspoon onion powder
  7. Kosher salt and freshly ground black pepper
  8. 1 tablespoon chopped fresh parsley
  9. 2 tablespoons honey
  10. 2 tablespoons mayonnaise
  11. 2 tablespoons Dijon mustard
  12. 1/2 teaspoon apple cider vinegar
  13. Kosher salt

Instructions

  1. For the cauliflower: Toss the cauliflower florets with the olive oil, ground mustard, paprika, garlic powder, onion powder, 1 teaspoon salt and several grinds of pepper in a large bowl until combined. Transfer to a 6-quart air fryer. Air fry at 375 degrees F, tossing halfway through, until tender, golden brown and crisp at the edges, 20 to 25 minutes (see Cook’s Note).
  2. For the creamy honey mustard sauce: Meanwhile, whisk the honey, mayonnaise, mustard, vinegar and a generous pinch of salt in a small bowl until smooth and combined. Refrigerate until ready to serve.
  3. Sprinkle the parsley over the cauliflower and serve with the creamy honey mustard sauce for dipping or drizzling.
