Miracle Mango Salsa Chicken

Ingredients

  1. 6 boneless, skinless chicken thighs
  2. 1 cup long-grain white rice
  3. One 16-ounce jar mango salsa
  4. Kosher salt and freshly ground black pepper
  5. Olive oil

Instructions

  1. Preheat a large cast-iron skillet over medium-high heat.
  2. Sprinkle the chicken thighs with salt and pepper on both sides. Add 2 tablespoons oil to the skillet and sear the chicken thighs until browned well, 2 to 3 minutes per side. Remove the chicken to a plate.
  3. Add the rice, 1 1/2 cups water and 1 cup of the mango salsa. Stir and bring to a boil. Add the chicken back to the top of the rice, reduce to a simmer, cover and cook until the chicken and rice are cooked through, 17 to 20 minutes.
  4. Serve up a pile of rice, topped with the chicken and garnished with additional mango salsa.

I used a rice cooker and used chicken broth instead of water, added onion, garlic and Serrano peppers, pretty tasty. Also caramelized onions when preparing chicken. I will make this again!

I made this for a dinner party and everyone loved it and wanted the recipe. I used a Southwestern rice mixture which made it a little spicier. Easy and not having to turn on the oven in the heat is a plus!

Agree with others this needs to be doctored up a little, but overall it’s a good base! I added onion and garlic, seasoned my chicken with cumin and garlic powder in addition to s&p, added some cumin when I put the rice in, chicken stock in place in water. Used a mango habanero salsa. I also added a can of black beans to stretch this for more leftovers. Cilantro to garnish, sour cream for those who wanted. Basically, if you’re learning your way around the kitchen, take the time to read suggestions in the reviews. If you’re a more experienced cook, use your tried and true tricks for boosting flavor. I’ll make again!
