Cowboy Bacon Beans

Ingredients

  1. 4 cups dry pinto beans
  2. 1 pound thick-cut bacon, cut into pieces
  3. 2 whole green bell peppers, diced
  4. 1 whole onion, diced
  5. 1 cup brown sugar
  6. 1/4 cup ketchup
  7. 2 tablespoons mustard
  8. 1 tablespoon chili powder, optional
  9. 2 teaspoons salt, more to taste
  10. 2 teaspoons black pepper, more to taste
  11. 4 cloves garlic, minced

Instructions

  1. Rinse the beans under cold water, sorting out any rocks/particles. Set aside.
  2. In a heavy pot (cast iron), saute the bacon pieces until halfway cooked and the fat is rendered. Add the green peppers and onions to the pot and cook until starting to get brown, about 3 minutes. Add the beans and cover with water by 1 inch. Bring to a boil, and then add the brown sugar, ketchup, mustard, chili powder, salt, pepper and garlic. Reduce the heat to a simmer, place on the lid and cook until the beans are tender and the liquid is thick 3 to 4 hours.

I precooked my beans in a pressure cooker. Sweat the vegetables separately. I tasted the beans before I added the vegetables and the flavor was just fine. A hint of sweet, but not overwhelming. I added the beans, spices and vegetables together and let them sit all day. I did not use any dead animal to the main pot. I reheated the dish for dinner. I had a side of Hawaiian smoke meat available to add for folks that wanted it.
This turned out great. I might precook the beans a little shorter time the next time.

One question, were anyones beans tough.. kept cooking even though they were too tough to eat, and, btw, the seasoning was way off way too sweet for our taste, had to throw it out. Such a waste.

I make these for all the guys when we go to our deer lease along with regular cornbread and Mexican cornbread and they all love it I cook it for only 3 hours because it’s on a gas stove

Yikes! Beans were mush inside of 90 minutes and the liquid had not thickened/reduced at all… If I had kept going until it was thick as shown, the beans would have been disintegrated. Down the GD-what a waste.

We have all the Pioneer Woman Cook Books, the receipt cards, and subscribe to the magazine. We have made LOTS of the things. This was the worst. My wife and I each took one bite and threw them out. The spices are way off. They are overly sweet and seem to need spices. With the cost of bacon this is a real waste of a pound.

Hello all, I have a question? My beans never seemed to get done completely. The recipe calls for dry beans, I assume that means without soaking them in water over night just rinsing and dumping into the pot. What did I do wrong? I wasted the whole recipe and not to say bacon is so expensive now. There was such a great flavor but no one likes crunchy beans.

I’ve made this several times and it always turns out great. I sub jalapeños for the green peppers, because I’m not a green pepper fan. But that’s the only change I make and the family loves how it turns out.
