Cast-Iron Pork and Bean Cobbler

Ingredients

  1. 1 tablespoon vegetable oil
  2. 1 pound kielbasa, cut into 1/2-inch rounds
  3. 1 medium onion, diced (about 1 cup)
  4. 3 ounces tomato paste (1/3 cup)
  5. 2 tablespoons dark brown sugar
  6. 2 tablespoons balsamic vinegar
  7. 1 tablespoon chopped chipotle in adobo
  8. Two 14-ounce cans navy beans, with liquid
  9. Kosher salt and freshly ground black pepper
  10. 2 hot dog buns, cut into 1/2-inch cubes
  11. 2 tablespoons unsalted butter, melted
  12. 1/4 cup pickle relish

Instructions

  1. Preheat the broiler to high with a rack set 2 inches from the heat source. Line a plate with a paper towel. 
  2. Heat a large skillet over medium-high heat. When hot, pour in the oil. Add half of the kielbasa rounds and cook until browned, about 2 minutes. Flip and cook for 1 minute more. Transfer to the lined plate. Cook the remaining rounds until both sides are browned and add to the plate. Reduce the heat to medium, add the onion, and cook until softened and slightly browned, about 5 minutes. 
  3. Whisk the tomato paste, brown sugar, vinegar and chipotle into the onion. Pour half a can of beans (including the bean liquid) into the skillet and mash with a fork until creamy. Add the rest of the beans, the kielbasa, 1/2 cup water, 1 teaspoon salt and a couple turns of pepper. Simmer until thick and creamy, about 20 minutes. 
  4. Meanwhile, toss the hot dog bun cubes with the melted butter on a baking sheet and sprinkle with salt and pepper. Broil until toasted and browned, flipping occasionally, about 2 minutes. 
  5. Divide the kielbasa and beans among 4 bowls. Top evenly with the hot dog bun croutons and pickle relish.

I just made this for my husband’s birthday with a salad. He loves spicy food and I am typically a mild spice girl. It was perfect on the spice for us both. I am seriously considering making this for my family reunion next month. I will be making this again!!

Awesome recipe! I pretty much followed the recipe as written with the exception of the beans. I did not have any canned beans on hand, but I did have 1 pound dried navy beans which I used. Made them in the crock pot the night before.
The only thing I would change is for my guys. Being the true carnivores they are, I will add another pound of kielbasa the next time I make this dish. Personally, there was enough meat for me and they did not complain, they said it was good.  I just know what they like. 
Thank you for this recipe, it is a repeater at our home.
