A traditional recipe from the bayous of south Louisiana, the seasoned roux is used to make this chicken and sausage gumbo. After numerous failures, I modified the recipe. Serve it warm over hot rice or alongside potato salad.

Ingredients
- 1 teaspoon butter, or as needed
- 1 pound ground beef
- ½ cup diced onion
- 2 cloves garlic cloves, pressed
- salt and freshly ground black pepper to taste
- 1 cup shredded sharp Cheddar cheese, divided
- 2 tablespoons ketchup
- 2 tablespoons mayonnaise
- 2 tablespoons diced dill pickles
- ½ tablespoon mustard
Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Grease a baking dish with butter.
- Cook ground beef and onion in a large, nonstick skillet over medium heat until beef is browned and onions are soft and translucent, 5 to 10 minutes. Add garlic and cook until fragrant, about 1 minute. Season with salt and pepper. Stir in 1/2 cup Cheddar cheese until well combined.
- Remove from heat. Add ketchup, mayonnaise, pickles, and mustard. Transfer mixture to buttered baking dish and top with remaining 1/2 cup Cheddar cheese.
- Bake in the preheated oven until cheese is melted, 7 to 10 minutes.

Just wanted to put my two cents in to tell you that I made this Cheeseburger Casserole for my brother & sister who I need to cook for because they are recovering from various illnesses and I’m happy to report that they LOVED IT! Thanks for this recipe!
Okay, I’m not one for recipes. I DO NOT follow them. With that being said, I’m not going to lie, I didn’t follow this one, I just followed the idea. Though, still low carb, I added stuff. I first sautéed onions and red bell peppers. Added minced garlic after and then browned my beef. Added a little Worcestershire, some onion powder and didn’t skimp on the salt and pepper. Once it’s brown I turned the fire off. I then in a separate bowl mixed ketchup, Mayo, mustard, minced onion, pickle juice and paprika and then mixed that into my meat. I then added about 10-15 chopped pickle slices and about 1/2 cup of cheese and mixed that. Put it all in a casserole and topped with crispy bacon and more cheese and put in the oven. I served over a bed of lettuce and tomatoes…. Thanks for the idea, but ^ that recipe needed a little help, and I did just that!

The recipe is undeniably simple and some folks say it’s tasteless, but to someone who’s already accustomed to low-carb eating there’s more than enough flavor! I toast some low carb tortillas and find it rich and satisfying.
This is a family favorite. They like more pickles in the casserole. I’ve also added bacon for a bacon cheeseburger casserole.
Really good- I added crumbled bacon while sautéing the beef and onions.
Perfect for the Keto diet. After the first day, which is wonderful, the next day is even better. Cut the whole casserole into even parts and it will be easy to eat for any meal. Taste was wonderful.

This dish was somewhere between tasteless and awful. I used top of the line ingredients and followed the recipe exactly. The result was, at first taste, without any flavor at all. But we persevered, thinking the flavors would eventually emerge, but no luck – the lack of flavor developed into a really bad taste. Wasted time and ingredients, and still hungry.
Delicious! This can be eaten alone, or added to so many other dishes….stuffed peppers, zucchini, etc. So simple yet tasty. I made exactly as instructed…next time I’ll double. Thank you!
