Grandma’s Tuna Casserole with Potato Chips and No Noodles

The recipe is from my grandmother. Because recipe uses two cans of each ingredient, my father refers to it as “Toucan Tuna Casserole”. It differs from other tuna casserole recipes in that it substitutes potato chips for noodles. Worcestershire sauce is recommended.

Ingredients

  1. 2 (13.5 ounce) bags large, ridged potato chips (such as Ruffles®)
  2. 2 (15 ounce) cans green beans, drained
  3. 2 (10.5 ounce) cans condensed cream of mushroom soup
  4. 2 (5 ounce) cans water-packed tuna, drained and flaked

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Crush potato chips into a large bowl. Add green beans, condensed soup, and tuna and mix until well combined. Pack into a 10×14-inch casserole dish.
  3. Bake in the preheated oven until the top is crispy, about 30 minutes.
  4. For some reason, any potato chip other than Ruffles doesn’t work as well. If you want to use a different size bag and don’t know how much to use, my dad says the mixture should be “stiff with potato chips.” I’ve tried using less and that doesn’t work either, so don’t be stingy.

Inedible. Way too dry. It called for 2 bags of chips. Should have been 2 cups.

This was the very first dinner I ever made when I was 7 – way back in the 50’s. Minus the beans. Going to make it with my young grandson tomorrow. It is so good and so easy. Maybe add some additional finely chopped sautéed mushrooms.

I grew up with my mom making this, then my children grew up with me making this, and I still do. We always added green peas, and I like to add shredded cheddar on top. I am actually making this tonight as I have a bag of Lay’s ridged that’s been waiting for chip dip for a week, so decided to get tuna instead to make a casserole
