Chicken, Broccoli, and Cottage Cheese Casserole

The best part of this dish is that it comes together quickly, uses few ingredients, and yields delicious chicken breast. The benefit: if you add some vegetables on the side, you’ll have everything you need for a full supper. You can also change the spices to your liking.

Ingredients

  1. 1 (16 ounce) package frozen broccoli
  2. 2 (10 ounce) cans white meat chicken, drained and flaked
  3. 1 (10.5 ounce) can condensed cream of chicken soup
  4. 1 (8 ounce) container cottage cheese
  5. 1 (8 ounce) package shredded Cheddar cheese
  6. ¼ cup creamy salad dressing (such as Miracle Whip®)
  7. 1 tablespoon lemon juice
  8. 1 sleeve butter-flavored crackers, crushed
  9. ¼ cup butter, melted

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Combine broccoli and 1/2 cup water in a saucepan over medium heat. Cover and cook until tender, about 10 minutes. Drain.
  3. Transfer broccoli to a 9×13-inch casserole dish. Add chicken, condensed soup, cottage cheese, Cheddar cheese, salad dressing, and lemon juice and mix until well combined.
  4. Mix crushed crackers and melted butter together; sprinkle over the casserole.
  5. Bake in the preheated oven for about 30 minutes.

Recipe tasted good, but felt incomplete as is. It felt more like a dip and was just missing something. However, adding some whole crackers and putting scoops of this dish on top worked well. We also tried with with white rice cooked separately and it was a nice pairing. I might make this again and it was easy to put together, but it’s probably not going to be a regular go-to recipe.

I went by the recipe to the letter. I thought it tasted bland. But for leftovers the second night it tasted quite good. Go figure!

I made this recipe using mayo instead of miracle whip. We always have mayo in the house and no one in the house enjoys miracle whip, so we use what we have. It was creamy, tasty, and easy to make. I am a diabetic and the total carbs fit into my meal plan. I saw someone mentioned using ranch dressing, that might be something I try as well.

I used mayo, but just put around 2 tbsp and the dish turned out great! Definitely I’ll do it again

I really enjoyed this dish. However, I did use fresh cooked chicken and assorted fresh steamed veggies. I don’t care for crackers so I used Frenches fried onions that added the very needed seasoning. This is an easy dish that would be enjoyed by all ages. A fresh loaf of French bread would top it off.

This was fantastic. My family loved it. We added cauliflower and did not use the lemon juice due to allergies. We did not pre cook the Broccoli or Cauliflower. It was so good they ate seconds!!!

Delicious, quick and easy! I made this dish as written and it was so good. It is one of those meals you can customize quite easily if desired – I’m going to add some french-fried onions to the topping next time and a bit of smoked paprika just because I love the flavor but it is totally awesome just as written and couldn’t be easier to throw together.
