Cheesy Ground Beef and Potatoes

Ingredients

  1. nonstick cooking spray
  2. 3 cups thinly sliced, peeled potatoes
  3. 2 tablespoons butter, melted
  4. ½ teaspoon salt
  5. 1 pound ground beef
  6. 1 (10.5 ounce) can cream of mushroom soup
  7. 1 ½ cups shredded sharp Cheddar cheese, divided
  8. ½ cup milk
  9. salt and ground black pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Spray a 9×13-inch casserole dish with nonstick spray.
  2. Place sliced potatoes in a large bowl. Pour melted butter over top and sprinkle with salt; mix until potatoes are thoroughly coated. Line the bottom and sides of the prepared casserole dish with potatoes, overlapping as needed.
  3. Bake in the preheated oven until potatoes are fork-tender, 20 to 30 minutes.
  4. While the potatoes are baking, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  5. Transfer beef to a large bowl and add condensed soup, 3/4 cup Cheddar cheese, and milk. Season with salt and pepper and mix until well combined.
  6. Remove potatoes from the oven. Pour beef mixture over top and return to the oven. Bake until heated through, about 15 minutes. Sprinkle remaining Cheddar over top and bake until melted, 4 to 5 more minutes.

This is an ok base recipe to build on. You will need to add your own preference on seasoning because as written it’s plain out boring. We add salsa some nights with homemade cheddar cheese sauce (1 cup evaporated milk, 1 cup fresh shredded cheese, 1 teaspoon lemon juice. Heat milk and cheese in a saucepan till cheese starts to melt. Add lemon juice. Continue stirring medium heat till creamy. The lemon aids smooth melting like a healthy Velveeta) bell pepper, sometimes a little sweet pepper, onion and some garlic. Pan fry the potato slices in the butter instead of the oven till crispy. Cook the hamburger, salsa, peppers and onions together. Add garlic the last couple minutes to avoid burning it. Salt and pepper meat and potatoes. Drain off grease. Layer potatoes, then meat mix, then a layer of cheese sauce. Like a lasagna. Top with cheese. Bake 400 for 15-25 minutes till heated through

Great for Beginner Cooks! This dish screams comfort food!! For seasoned cooks this is a blank slate recipe to add your own delights. I added to taste granulated garlic, paprika, onion powder. Also, added (2) green onions sliced, (1) jar red pepper diced and ¼ cup chopped fresh mushrooms. All these were added for extra flavor and color. The potatoes were sliced on a mandolin using the #2 selection. Ground turkey was substituted for ground beef as this is our preference in meats. The sky’s the limit on additions to make this great recipe your own and change it up for a favorite dinner at your home.

Like others, I think this recipe needs more flavor. Garlic and onions would help tremendously. With the extra seasoning, it would really be pleasing to a meat and potatoes person.

I’m the kind of person who likes a lot of flavor. So when i make it next time I’m going to add a little more salt, some extra black pepper, garlic powder, onion powder and maybe some red pepper flakes! Otherwise it was really good! My boyfriend and I really enjoyed it!

So yummy! I added onion and garlic powder, chopped onions and some chopped up green chili. It was delicious for dinner. The next day, we rolled up the leftovers in a tortilla and made a burrito! Definitely will make this recipe again! Thanks Yoly!

I loved this!!!! I see some others are saying its bland. You have to add your own stuff, mix it up a bit. I added onions and spices (cayenne, garlic, paprika, salt and pepper) to the ground beef. Then when I mixed it with the mushroom soup, I added some sour cream in there too! I also used a mix of chedder and mozza cheese. I didn’t measure the potatoes slices though..and think I may have had too little, so I will add more potatoes next time!

Made as directed. Added diced onions and more seasoning. This is very easy and it was delish!! You really have to add seasonings and things you know will make it better. Very good comfort food with things we always have on hand. Yum :))

I sautéed some onions and garlic with extra lean ground beef in butter. Didn’t drain the butter. Boiled the potatoes first to save oven time since it’s summer in Texas. But crisped it up in the oven for 20 more minutes. Honestly, it looks like dog food. Very unappealing to us. Don’t skip cheese on top, to help hide how it looks.

I made this tonight because I was getting in a rut, could king the same dishes on a regular rotation. I didn’t have mushroom soup so I used cream of chicken and instead of 1/2 cup milk, I used 1/4 cup and 1/2 cup of beef bone broth. I also added diced onions, garlic and onion powders, about 1/2 tsp of Mrs. Dash seasoning with jalapeno and I extra cheese. It tasted much better after I finished “doctoring” it! I agree that if you don’t spice it up to suit your personal taste, it is bland and boring and is somewhat reminiscent of the Hamburger Helper meals I used to make after I first married and my husband and I were pretty poor. I will make this again but with some additional changes, like using more potatoes, Golden mushroom soup and maybe even a little Worcestershire sauce. It might be good with some kind of veggies as well.

It didn’t start off as a 5 star. The taste of the original recipe was bland and light on body. When I made it the second time I doubled the layer of potatoes on the bottom of the pan and put a single layer of overlapping potatoes around the side then baked as directed. Then to the meat I added fresh chopped garlic and diced onion when cooking. The mushroom soup, cheese and salt and pepper remained the same as the original recipe. This time the family asked me to add it to my recipe book!

We love this recipe. It is affectionately called “the slop” as it is impossible to get it out of the pan looking nice, but it doesn’t matter, it tastes so good. I used Campbell’s cream of cremini & shiitake mushroom soup, added 1/2 pkg of onion soup mix and frozen mixed vegetables. I also used more potatoes than the recipe called for and extra cheese and threw in some mushrooms. I also have tried using shredded hashbrowns for the potatoes when I was lazy.
