Cheesy Chicken, Broccoli, and Rice Casserole

I needed to bake more with halva after tasting Ottolenghi’s walnut halva cake. It is quite delicious. Halva and tahini were added to this apple cake recipe that I modified to accommodate them.

Prep Time: 20 mins

Additional Time: 5 mins
Total Time: 1 hr
Servings: 6
Yield: 6 servings

Ingredients

  1. 1 ½ cups water
  2. 1 ½ cups uncooked instant rice
  3. 2 large cooked chicken breasts, cut into 1-inch cubes
  4. 1 head broccoli, cut into florets
  5. 2 (10.5 ounce) cans condensed cream of broccoli soup
  6. 1 cup milk
  7. 1 tablespoon Italian-seasoned bread crumbs
  8. 1 teaspoon garlic powder
  9. ⅛ teaspoon ground black pepper
  10. 1 (8 ounce) package shredded Cheddar cheese

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Bring water to a boil in a saucepan. Add rice, stir, cover, and remove from the heat. Let sit until water is absorbed, about 5 minutes. Fluff with a fork.
  3. Transfer rice to a casserole dish and mix with chicken and broccoli.
  4. Combine condensed soup, milk, bread crumbs, garlic powder, and pepper in a mixing bowl; mix until well combined. Add to the casserole dish along with 1/2 of the Cheddar cheese; mix to combine. Sprinkle remaining Cheddar over top.
  5. Bake, uncovered, in the preheated oven until heated through and bubbly, about 30 minutes.

Easy and fast if you have left over chicken. I used cream of mushroom and added a layer of breadcrumbs under the cheese to give it crunch. Will make again

Very good recipe for a weeknight dinner! I have made this two ways; one exactly as written and one with less cheese. To make it a bit healthier I did cut back on the cheese and only used 1 can of soup. Still very tasty.

This is really delicious! I expected to need more seasoning, but it worked great as is. Though I couldn’t find cream of broccoli soup so I used Campbell’s condensed broccoli cheese soup. That was a great choice.
