Ingredients
- 1 pkg. (26-32 ounces) frozen shredded hash brown potatoes
- 1 pkg. Jimmy Dean® Hearty Original Sausage Crumbles
- 2 cup (8 ounces) shredded mozzarella cheese
- 1/2 cup (2 ounces) shredded Parmesan cheese
- 1/2 cup julienne cut sun dried tomatoes packed in oil, drained
- 6 green onions, sliced
- 12 eggs
- 1/2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- 1. Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoes on the bottom of slow cooker.
- 2. Top with half of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onion. Repeat layering.
- 3. Beat eggs, milk salt and pepper in large bowl with a wire whisk until well blended.
- 4. Pour evenly over potato-sausage mixture.
- 5. Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set.
- Substitute 1 pkg. Regular Flavor Jimmy Dean® Pork Sausage Roll, cooked, crumbled for Jimmy Dean® Hearty Original Sausage Crumbles.

Great recipe! I love the crispy edges. I omit the sundried tomatoes, add in peppers, and substitute regular sausage for Italian turkey sausage.
The pic made it look SOOOO good, that I had to try it even though it had low reviews. So sorry, I must agree that this recipe is a FAIL. Nice try though-thanks!!
Horrible! Waste of ingredients. Followed the recipe exactly put it in at 11:15 pm. Came out at 7:00am to a burnt mess.
This recipe was ok. I used the lesser amount of hash browns and it was a LOT! The eggs were hard to taste because… potatoes. I had some bacon leftover from a recent recipe and added that to this casserole, too. Maybe giving a good stir before covering to cook would’ve made a difference? I think I’m just not a fan of layers unless it’s a cake or a 7-layer dip… anyway, it wasn’t horrible. It just wasn’t great.
