Sheet Pan Green Bean Casserole

Ingredients

  1. 1 pound haricot verts or green beans, trimmed
  2. 4 ounces shiitake mushrooms, stems removed, julienned
  3. 1 1/2 tablespoons olive oil
  4. 1 tablespoon capers
  5. Kosher salt
  6. 1 tablespoon butter
  7. 1 tablespoon all-purpose flour
  8. 1 cup whole milk, warmed
  9. 1/2 teaspoon garlic powder
  10. 1/2 teaspoon freshly ground black pepper
  11. 4 ounces goat cheese, crumbled
  12. Kosher salt
  13. 1/2 cup crispy fried onions

Instructions

  1. Preheat the oven or a toaster oven to 400 degrees F.
  2. For the green beans: Place the green beans on a sheet pan. Add the mushrooms, olive oil and capers, sprinkle with 1/4 teaspoon salt and toss to coat. Roast the green beans until tender and the skins blister, 8 to 10 minutes depending on the thickness of the green beans.
  3. For the goat cheese sauce: Meanwhile, add the butter to a small saute pan over medium heat and cook until it starts to bubble and brown. Add the flour and stir to cook the flour, 1 to 3 minutes. Slowly whisk in the milk. Continue to cook until the mixture simmers and thickens, about 10 minutes. Add the garlic powder and pepper. Remove from the heat and add 3 ounces of the goat cheese. Taste and season with salt.
  4. For the garnish: When the green beans are tender, pour the goat cheese sauce on the bottom of a platter. Top with the roasted green beans and sprinkle with the remaining goat cheese and crispy fried onions. Serve immediately.

I’ve been making this at each Holiday meal for three years now. My daughter requests it every time and the whole family loves it. I use crispy bacon in place of capers for my husband, or sometimes just leave it off. So delicious and a beautiful presentation.

This had great compliments. It was my fault that I made the sauce too early and it got too think even though I added more whole milk. The flavor of the sauce was fantastic.

I did blanche the green beans first. I subbed partly cooked bacon for the capers, since my hubby doesn’t like capers at all. Will make again!

Made this for Thanksgiving dinner, since we were socially distancing, I packed 1/2 of the recipe up for family members. Wish I kept it all for me- best green beans ever. Sauce was creamy and so much more flavorful than the traditional green bean casserole. Presentation was awesome- even though only my husband and I got to enjoy it!
