Chicken Stuffing Casserole

Ingredients

  1. 2-1/2 cups chicken broth
  2. 1 cup butter OR margarine
  3. 1/2 cup chopped celery
  4. 1 can (4 ounces) mushrooms, drained
  5. 1/4 cup Spice Islands® Parsley
  6. 2 tablespoons Spice Islands® Minced Onion
  7. 1-1/2 teaspoons Spice Islands® Sage
  8. 1 teaspoon Spice Islands® Poultry Seasoning
  9. 1 teaspoon salt
  10. 1/2 teaspoon Spice Islands® Sweet Basil
  11. 1/2 teaspoon Spice Islands® Fine Grind Black Pepper
  12. 12 cups day old bread cubes OR unseasoned bread cubes for stuffing
  13. 2 eggs
  14. 1 can (10-3/4 ounces) condensed cream of chicken soup
  15. 5 cups chopped, cooked chicken OR turkey

Instructions

  1. Combine broth, butter, celery, mushrooms, parsley, onions, sage, poultry seasoning, salt, basil and pepper in a large saucepan; simmer for 10 minutes. Place bread cubes in a large bowl. Combine eggs, soup and chicken; stir into broth mixture until smooth. Pour over bread and mix well. Place mixture in a greased 5-quart slow cooker. Cover and cook on LOW for 5 hours or until a thermometer inserted into center of stuffing reads 160°F. Note: Stuffing can also be placed in a greased, covered casserole dish, and baked at 275°F for 3 hours.

It’s pretty good. I did follow the ingredients and amounts, except I sautéed onion with the celery. I started cooking it in a crockpot, but it was very mushy. I moved it to a casserole dish, put it in the oven, and even broiled the top for a few minutes, which I think helped. I’m not sure it needs to cook for so long – maybe only because of the raw eggs? I used cut up raw chicken breasts and didn’t cook them all the way through prior to adding them to the crockpot. The chicken was quite cooked, even a little dry. I liked the flavor. I may cut out the eggs the next time and shorten the cooking time.

Sooo good!! I used pork chops instead of the chicken and did not pre-cook the meat because there’s really no need to, just put it in raw. Also I used fresh onion, parsley, basil and mushrooms. I also cut down the butter to one and a half sticks instead of two sticks.
