Ingredients

  1. Leftover chicken parts including backs, necks and bones
  2. 2 carrots, chopped
  3. 1 celery stalk, chopped
  4. 1 bay leaf
  5. 3 peppercorns
  6. 1 onion, peeled and halved
  7. 8 cups water

Instructions

  1. In large pot combine chicken, carrots, celery, bay leaf, peppercorns, onion. Add water and bring to a simmer. Skim off fat forming at top. Cook for 2 – 3 hours. Strain. Freeze or refrigerate.
