Carrot, Date and Feta Salad

Packed with antioxidants, carrots add crunch and natural sweetness to this dish. Low in calories and fat, this salad gets better as it sits and it doubles as a crunchy, fresh topper for a turkey sandwich.

Ingredients

  1. 3 medium carrots
  2. 2 tablespoons roughly chopped fresh cilantro
  3. 1 1/2 tablespoons extra-virgin olive oil
  4. 2 teaspoons honey
  5. Kosher salt
  6. Juice of 1 lime
  7. 1/4 cup crumbled feta cheese
  8. 2 tablespoons chopped toasted almonds
  9. 2 tablespoons finely chopped dates

Instructions

  1. Thinly slice the carrots into ribbons using a vegetable peeler or mandolin, including any remaining “stubs” of carrot. Soak in ice water until the ribbons firm up and curl, about 15 minutes. Drain and pat dry. 
  2. Whisk together the cilantro, olive oil, honey, 1/2 teaspoon salt and the lime juice in a medium bowl. Add the carrots along with the feta cheese, almonds and dates, and toss until evenly combined. Serve immediately, or let the salad marinate a bit before serving.

This was so much better than I even expected! Very easy and will make again. My dates were a little on the dry side as it was the end of the container so I just soaked them in warm water for a bit and drained.

I love this salad. I am not very adventurous but I like great flavors. This has wonderful flavor, it’s bright and crunchy and perfect for the summer. The flavors blend very well to create a great dish. Quick and easy to make. I love it and will make again and again. I don’t know why there is one red star in my rating.

We love this delicious salad!  Its flavors are so unique, and they come together in a really yummy way. It holds up well so it’s good the next day — IF there are any leftovers!  I make it exactly as the recipe instructs, however I now skip the part where you soak the carrots because I didn’t see much difference one way or the other. I’m making it again today as a side dish for our burgers, and it’s become a recurring addition to my spring and summer menus!

Just made this and it was really good!. i had it with a roasted chicken breast. I forgot to add the olive oil and in my opinion it didn’t need it. It was easy to make and very yummy!

I tasted this salad at a recent dinner and LOVED it … so fresh and delicious. It was served with the feta on the side and, frankly, I didn’t think it needed the feta.

Although this recipe looks beautiful when its made it was not a winner for us. The flavor mixture did not merry well together. I would not make it again.
