Stuffed Artichoke Hearts

Ingredients

  1. 3 (14-ounce) cans whole artichoke hearts
  2. 2 scallions, finely sliced
  3. 1 cup shredded red cabbage
  4. 1 cup shredded carrot
  5. 1/4 cup Italian dressing
  6. Kosher salt and freshly ground black pepper
  7. 1 tablespoon sesame seed, for garnish

Instructions

  1. Pull out the center of the artichoke with your fingers to form a cup, and then slice a bit off the bottom to make a flat surface so the cups sit upright. Repeat with remaining artichokes. The artichoke centers can be used in a salad or omelet.
  2. In a large bowl, toss together the scallions, cabbage, and carrots. Add the dressing, taste, and adjust the seasoning with more salt and pepper, if necessary. Fill the artichoke cups with the slaw, garnish with sesame seeds, and serve.

This is a tasty and light alternative to the other calorie-laden stuff we eat all season…..and very pretty too……I made my own dressing as always. The only drawback is, getting the center out of the artichoke heart without destroying it……pretty tricky. Good thing I only had to make enough for 4 people (2 each!) because about half of the artichokes did not end up looking like lovely little cups…….but they went to good use in a quiche!
