Glazed Carrots with Marjoram

Ingredients

  1. 8 tablespoons unsalted butter
  2. 2 shallots, peeled and thinly sliced into rounds
  3. 2 pounds carrots, trimmed and cut into 3-inch pieces
  4. 4 fresh sage leaves, chopped
  5. 1 cup chicken broth
  6. 1/4 cup honey
  7. 1/4 cup dry white wine
  8. 2 tablespoons marjoram leaves, chopped
  9. Kosher salt and freshly ground black pepper

Instructions

  1. In a large skillet over medium heat, melt the butter, then add the shallots and cook until beginning to soften, 3 to 5 minutes.
  2. Add the carrots, sage, chicken broth, honey and wine and bring to a simmer. Cook until the carrots are tender and the liquid has reduced to a syrup, 8 to 10 minutes. Stir in the marjoram and some salt and pepper to taste.

This was delightfully good. Had yellow and purple baby carrots I needed to cook so just used whole. Have sage and marjoram growing in pots and all other ingredients so I followed the recipe pretty much exactly, (eyeballed wine and honey). The unexpected tasty treat was the yummy shallots. Will do this again and again as long as I have fresh herbs. Thanks, Nancy

I have been making these every Holiday for the passed 4 years. They are so perfect. Make sure to cut on the bias. I think the increased surface area allows for a balanced carrot to glaze ratio so it is not overpowering!

Made this for Christmas dinner!

I halved the recipe and used about 1 tablespoon dried marjoram instead of the fresh. 
Looked impressive and tastes delicious!!
