Ingredients
- 2 parts pineapple-coconut juice (recommended: Kern’s)
- 1 splash bottled lime juice (recommended: Rose’s)
- 1 part vanilla vodka
- 1/2 part half-and-half
- 1/2 part banana Schnapps
- Ice cubes
- 1/4 cup honey
- 1/4 cup sweetened coconut flakes (recommended: Baker’s)
Instructions
- Add all ingredients, except coconut flakes and honey, in a cocktail shaker with ice. Pour honey onto a plate. Lay out coconut on a plate. Dip the rims of chilled glasses into honey and roll in coconut. Shake and pour into chilled martini glasses to serve.
- Note: For a non-alcoholic version, omit the vodka and the banana Schnapps and substitute the ice with 1 banana. Puree the mixture in a blender.

I’ve tried many curry chicken and rice recipes. Looking for something with a little more zip that my mother’s. I love hers but I was craving a more intense flavor. This one hit the spot. I made it and served it at my 2 year old son’s birthday party and it was a huge hit with my family. A little spicy for the kiddies so I made a 2nd batch and replaced the curry paste with a tad bit of curry powder. Perfect for their sensitive taste buds. I love Pina Colada type drinks, but this is just gross. I’ll try another recipe – this one is disgusting.
The half and half did not curdle on me but the banana flavor is just weird. For a great tropical drink try the key lime martini on the website.

After we made it and saw the results, we just could not bring ourselves to drink the lumpy concoction.
The creme curdeled with the lime so it wasn’t that good.
