Codfish Mousse with Fried Plantain Chips

Ingredients

  1. 2 Yukon Gold potatoes, peeled and small dice
  2. 1 pound fresh codfish fillet, 1 1/2-inch chunks
  3. 2 cloves garlic, thinly sliced
  4. 6 thyme sprigs, tied together
  5. Salt
  6. 1 pint milk
  7. Olive oil
  8. Cheryl?s Hot Sauce, recipe follows
  9. 4 scallions, thinly sliced
  10. Plantain chips, recipe follows
  11. 10 whole Scotch bonnet peppers, rinsed and stems removed
  12. 1 to 1 1/2 cups white vinegar
  13. 10 whole pimento seeds
  14. 2 green plantains, thinly sliced
  15. Canola or corn oil, for frying
  16. Salt

Instructions

  1. In saucepan, layer the potatoes on the bottom. Then codfish, garlic then thyme. Season with salt then put enough milk in just to cover fish. Bring to a slow simmer covered with parchment paper. Simmer until fish is flaky and potatoes are tender. Remove the thyme bundle, drain the milk and process until smooth, in the bowl of food processor, using enough olive oil to smooth consistency. Season with salt and hot sauce, to taste, and stir in scallions. Serve with plantain chips.
  2. To a blender, add peppers and 1 cup of vinegar and puree. Add rest of vinegar if needed. Stir in pimento seeds. Store in a bottle or jar in refrigerator.
  3. Yield: 2 cups
  4. Heat oil to 350 degrees and fry chips in batches until crispy. Drain and sprinkle with salt.

I’m very open-minded and adventurous with food/cooking so this recipe was intriguing in theory, but the poaching liquid didn’t yield sufficient flavor to the fish and potatoes IMO and the finished texture was too puréed for my liking. (Puréed fish, at the end of the day, is a “no.”) Wanted to like it, but in the end, I threw 2/3 out.
