Caramel Candy

Ingredients

  1. Nonstick cooking spray, for spraying the pan
  2. 1/2 cup (1 stick) butter, plus more for buttering the pan
  3. 1 cup light brown sugar
  4. 1 cup granulated sugar
  5. 1 cup dark corn syrup
  6. 2 cups (1 pint) heavy cream
  7. 2 cups chopped pecans
  8. 1 teaspoon vanilla extract

Instructions

  1. Generously spray a 9-by-12-by-2-inch pan with cooking spray; line it with parchment and butter the top of the parchment.
  2. In a large saucepan, mix the brown sugar, granulated sugar, corn syrup and 1 cup of the cream. Heat until the mixture begins to boil. Slowly stream the remaining 1 cup cream into the mixture, stirring while it’s boiling. Attach a candy thermometer to the pan and cook the mixture over medium heat until it reaches 244 degrees F. Remove the pan from the heat and add the butter, chopped pecans and vanilla. Pour the candy into the prepared pan. Cool the candy in the refrigerator until it is just firm but not hard, about 1 hour.
  3. Cut the candy into 1-inch squares. Cut waxed paper into 4-inch squares and wrap each piece of candy individually. Store in the refrigerator. Remove the candy from the fridge and allow it to soften slightly before serving.

Delicious and pretty easy to make! I made a couple small changes: subbed light corn syrup for dark, cooked to 248 degrees, and topped cooled caramels with flaky sea salt. The caramels came out creamy and luscious, with an old-fashioned charm.

I made this for Christmas candy boxes and it was a huge hit! It was my first time making caramel and the recipe was perfect. I’ve been trying for years to make chewy Carmel candy like my grandmother used to make. I tried many times to make her recipe and always failed. This recipe is nearly identical and I made following Trisha’s recipe exactly. Came out perfect. Great Carmel candy. Next time I’ll put more pecans in it. Hint: after cutting the candy separate the pieces. If you don’t they kind of melt together making it difficult to get a single piece.

great candy and easy.  To those with problems setting up, Do the soft ball test in bowl of cold water. I personally cooked mine to 252 and it set perfect. Oh and I used 1 3/4 cupo cream as that’s all i had.

I have never ever had success with caramels, so I thought I would give Trisha’s recipe a try. I used a candy thermometer and it registered 244 degrees Fahrenheit, so I stirred in the vanilla, butter and pecans and poured it into the prepared pan and set it in the fridge for an hour. All I got was pan of liquid mess. Totally disappointed. I guess I was never meant to make caramels. I have been baking since I was a teenager and, at 68 years old, I guess I’m losing my touch.

Delicious! I don’t own a candy thermometer so I just did the good old cold water method that my mom uses when making fudge. When a spoonful of the boiling sugars and cream is placed in a cup of cold water and you can form a ball, it is ready to come off the heat. Works great every time!

This looked so good when Trisha made it on her show that I just had to try it. I was not disappointed. I don’t cook a lot so to me it was a little labor intensive, but totally worth it. Friends and family loved it.
