Ingredients
- 2 large Idaho potatoes
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 2 tablespoons butter
- 2 small, soft apples, such as McIntosh, chopped
- 1 small onion, chopped
- Salt and pepper
Instructions
- Prick potatoes several times each with a fork and microwave on high for 10 to 12 minutes. Cool potatoes until you can handle them and chop.
- Heat a medium nonstick skillet over medium-high heat with extra-virgin olive oil and butter. Add apples and onions and cook 5 minutes, add potatoes and season with salt and pepper, to taste. Crisp and brown the potatoes with apples and onions 5 minutes more, then serve.

My microwave died and we decided not to replace it, so I just diced up two white potatoes, two sweet potatoes with two Gala apples and onion. I seasoned them with garlic salt, italian seasoning and cinnamon. I let them cook slowly at low heat, covered, stirring often and they were perfect and delicious!
The idea is great. I cut the potatoes into chunks raw, then boil them for the same amount of time.
I used jalapeno and a habanero pepper soaked in lime juice for 30 minutes instead of the onion.
Go ahead and throw the potatoes in the pot before it is boiling. Start your oil the same time you heat your water. Go ahead and toss the peppers and apples in the oil as soon as it is hot enough. After boiling your potatoes for ten minutes, drain. Add 3 tablespoons butter to the pot, return potatoes and toss with butter and as much lemon pepper as you want. You can brown your potatoes separately from apples, then add them to your frying apples/peppers after browning properly. Just simmer together for about 3-5 minutes, then eat it all. I had the munchies.
I also boiled carrots with the potatoes as they cook the same amount of time, and added a yellow bell pepper to the apples as well. It was all perfect together.

So delicious with pork chops! Make sure the pan is oiled and really hot before adding the potatoes to crisp it up!
Loved it! Since I was making it for just me and my husband I used only one large apple and one potato. Nothing was mushy. I made it for breakfast as a side to pancakes but will definitely try it along side some pork chops.
I kept trying to make this crispy but ended up kinda mushy. It was still delicious though. I added sage at the end.
I made this for my boyfriend well over a year ago. He didn’t rave over it, so I made it one more time and then forgot about it. Just this weekend he asked if I would make it again. I guess it was memorable after all. I know I loved it and I make it for myself often. It’s very easy to cut back to one serving. The eggs from this episode are delish also. Both recipes are fast and easy to make with ingredients easily found in a small town. Sunday brunch solved. Thanks Rachael.

Well, the potatoes were too hot to handle when I took them out of the microwave, and they were hard to cut into small chunks, I ended up with an oily mess of potatoes that wouldnt brown along with the onions and apples. My family threw it out.
