Ingredients

  1. 1 (15.25 ounce) package yellow cake mix
  2. 1 (11 ounce) can mandarin oranges, juice reserved
  3. 4 large eggs
  4. ¼ cup vegetable oil
  5. 1 (16 ounce) package frozen whipped topping, thawed
  6. 1 (15 ounce) can crushed pineapple, drained
  7. 1 (3.5 ounce) package instant vanilla pudding mix

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Prepare the cake: Mix together cake mix, oranges with juice, eggs, and oil. Pour batter into three greased and floured 8-inch round pans. Layers will be thin.
  3. Bake in the preheated oven until a toothpick inserted into the center of cake comes out clean, 25 to 30 minutes. Cool layers on wire racks.
  4. Make the frosting: Mix together whipped topping, crushed pineapple, and instant pudding mix.
  5. Spread frosting onto the cooled cake layers. Stack layers; frost top and sides. Refrigerate until ready to eat.

DELICIOUS! Our family favorite. After preparing the cake mix add the mandarin oranges and stir in with a spoon to avoid mandarins from totally breaking apart with an electric mixer. When making the topping, be sure to strain the crushed pineapple to avoid the topping from being too thin, as some other reviewers have reported. My family calls it Dream Cake.

Arkansas State Fair blue ribbon winner years ago, that recipe used 3/4 cup of vegetable oil. Individual servings can be frozen and by lunchtime they will be thawed, or the whole cake can be frozen. Love this cake!

Pretty old recipe. I’d love to see it updated for the cake mixes now actually sold in stores that are 3 ounces smaller. (I came searching because my recipe is so old that the canned items are medium can of crushed pineapple and small can of mandarin oranges, and large tub of cool whip.)

I made this as directed except I added an extra can of drained mandarins to cake batter and I added a can of drained mandarins to the frosting along with the pineapple. I let the cake rest in the refrigerator overnight to maximize flavor and moisture. In the end the cake was very easy to make and looked pretty, but it really didn’t have much flavor.
