If you want a black and tan appearance, top this fluffy, light cheesecake with chocolate ganache, which has a hint of Guinness flavor.

Ingredients

  1. 2 cups graham cracker crumbs
  2. ½ cup butter, melted
  3. 2 (8 ounce) packages cream cheese, at room temperature
  4. ⅔ cup brown sugar
  5. 3 eggs
  6. 1 teaspoon vanilla extract
  7. ½ teaspoon ground cinnamon
  8. ¾ cup Irish stout beer (such as Guinness®)
  9. 2 cups semisweet chocolate chips
  10. ⅔ cup heavy whipping cream

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Mix graham cracker crumbs and melted butter in a bowl; press into an 8-inch springform pan.
  3. Combine cream cheese, brown sugar, eggs, vanilla extract, and cinnamon in a bowl until smooth; stir beer into cream cheese mixture until batter is thin and smooth. Pour batter over graham cracker crust.
  4. Bake in the preheated oven until cheesecake is puffed and set in the middle, 40 to 60 minutes. Cool completely.
  5. Melt chocolate chips and cream in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Pour over cooled cheesecake. Cover with plastic wrap and refrigerate 4 hours to overnight.
  6. This recipe can also be used for eight 6-ounce ramekins lined with parchment tabs. Cut parchment strips 2 inches wide and 8 inches long and line ramekins before pressing in crumbs.

Turned it into cupcakes. The Guinness added a nice flavor to the cheesecake, not too overpowering. The mixture was a bit watery, but they came out fine. They disappeared before I could take a pic lol.
