Ingredients

  1. 1 (15.25 ounce) package white cake mix
  2. ¾ cup coconut milk
  3. 3 large eggs
  4. ⅓ cup vegetable oil
  5. ¼ cup water

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking pan.
  2. Mix cake mix, coconut milk, eggs, oil, and water together in a bowl using an electric mixer for 2 minutes; pour into the prepared pan.
  3. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 35 to 40 minutes.

7.4.22 I had a 15.25 oz box (added 3 oz cake flour to come to 18.25 oz) of a marble cake mix that was beyond the “best by…” date, and I had exactly 3/4 cup coconut milk in the fridge left from dinner last night, so this recipe was ideal. It came out of the oven at 32 minutes, and was perfectly cooked and tender. Couldn’t taste any coconut at all, but maybe that’s because of the cake mix I used. Super easy to make for a cook-out day and served with just a dusting of confectioners sugar. Certainly nothing fancy here, just a quick-and-easy, simple, and tasty dessert.

I used coconut milk for all 1 cup of liquid. I also sprinkled the top with unsweetened coconut before baking. Tasted great with whipped cream and fresh fruit.

This recipe made great cupcakes-I put coconut flavor in the icing and sweetened coconut on top. Didn’t change anything in the recipe. Found coconut milk and the cake mix at the dollar store! I would make it again

Cake was delicious! I frosted it with white frosting that I mixed about a tablespoon of coconut milk and a teaspoon of coconut extract and covered the entire cake in sweetened coconut flakes.
