These brownie cupcakes are scrumptious, moist, and chock full of chocolate. This is a recipe from my grandma Page.

Ingredients

  1. 1 cup unsalted butter
  2. 1 cup chocolate chips
  3. 1 Β½ cups white sugar
  4. 4 large eggs
  5. 1 cup all-purpose flour
  6. 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C). Line 18 muffin cups with paper liners.
  2. Melt butter and chocolate chips in a saucepan over low heat, stirring until smooth, 3 to 5 minutes. Remove from the heat and let cool, 10 to 15 minutes.
  3. Beat sugar and eggs in a mixing bowl with an electric mixer until thoroughly combined. Mix in flour and vanilla. Fold in cooled chocolate mixture until smooth. Spoon batter into the prepared muffin cups, filling each 1/2 full.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean or with a few moist crumbs, about 30 minutes.

These were so good. My family loved them so much! They loved the crispiness of the top! My family loves peanut butter and chocolate so I topped with homemade peanut butter buttercream frosting. So yummy and pretty too!

Made these gluten-free by using Bobs Red Mill all purpose gluten-free flour and gluten-free baking squares, which made them lower in sugar as well. Turned out great! Used some of The brownies to make a tunnel for my grandsons train birthday cake.

When I took these cupcakes out of the oven, THEY FELL!!!!! They looked awful, the tops caved in and were super crispy not to mention that they were almost hollow. Also, didn’t really have a strong chocolaty flavor. Very disappointing. πŸ™ πŸ™

These turned out amazing! Added some chocolate chips to the batter as I saw another user recommended, and topped with buttercream frosting. Delicious recipe, even the only person in the house who dislikes chocolate enjoyed them! It made more batter than planned, so I filled the cupcake tins nearly to the top and baked them for a bit longer. Still tasted great, I highly recommend this recipe to any chocolate fiends looking for a fun recipe to follow πŸ™‚

Yummy and super easy! The only change I made was to add half of the batter into the cupcake paper, sprinkle in a few chocolate chips, then add the rest of the batter. It gives them an extra chocolatey gooey center.

My husband and I are in Florida for a month visiting our daughter and her family. We rent a home and I don’t fully stock all the ingredients I keep in my pantry at home for just a month. We’re heading for Sunday dinner at my daughter’s home and I came across this simple but yummy recipe while looking for a dessert to make with ingredients I have on hand. I followed the recipe exactly and added about 3/4 cup mini chocolate chips. I love the crunchy tops of these cupcakes and the soft middle! If you’re looking for a fudgy chocolate brownie, these won’t do. But they’re delicious with a more mellow chocolate flavor and I’ll make them again! I did get 23 brownies from the recipe.

Made these yesterday. Followed the recipe and the number made and baking time was right on. They even look exactly like the picture. πŸ™‚ My husband and I had them for dessert with vanilla ice cream. We enjoyed them and will definitely make them again.
