White Chocolate and Coconut Mug Cake

Ingredients

  1. 1/4 cup plus 2 tablespoons milk
  2. 2 tablespoons butter, melted and cooled
  3. 1 teaspoon vanilla bean paste or 2 teaspoons vanilla extract
  4. Pinch kosher salt
  5. 1/2 cup moist vanilla boxed cake mix
  6. 1 tablespoon white chocolate chips
  7. Coconut whipped cream, store-bought or homemade, recipe follows
  8. Toasted coconut, for garnish
  9. One 15.33-ounce can coconut milk, refrigerated
  10. 2 tablespoons confectioners’ sugar

Instructions

  1. In a bowl, whisk together the milk, butter, vanilla and salt. Add the cake mix and whisk until no lumps remain. Add the chocolate chips and pour into a microwave-safe mug. Microwave on high until puffed up and firm, about 2 minutes 10 seconds. Let cool for 5 minutes.
  2. Top the cake with coconut whipped cream and toasted coconut.
  3. Open the can of coconut milk, scoop out the solid coconut cream on top and put in a stand mixer with the sugar. Beat on high until stiff peaks form, 5 to 10 minutes.

Maybe I switched u the recipe a little bit but the recipe I came up with is OMG so good! I added everything he said except the whipped cream and the cake mix. I added a marshmallow for the whipped cream and added flower and sugar for the cake mix. I added 1 3rd of a cup of flour and added 2 tablespoons of sugar. I also added Nutella in the middle. I did finish it with a garnish of coconut. The marshmallow puffed up super big! It was awesome! It was delish!

SO good and satisfied a craving! Using vanilla bean paste really made a difference.

This is an excellent recipe. You can use any boxed cake mix flavor and add or leave out chocolate chips as appropriate and use whatever icing you like. Yum!

I would not make this again.  My family and I did not care for it.  May be a personal preference.
