Ingredients
- 1 quart heavy whipping cream
- 1 cup powdered sugar
- One 9-ounce box thin chocolate wafer cookies
Instructions
- In the bowl of an electric mixer using a whisk attachment, whisk the heavy cream and powdered sugar until stiff.
- Crush one-third of the wafers by hand or with a rolling pin inside a resalable plastic bag until they become coarse crumbs. Set aside.
- In a round 9-inch springform pan, layer in one-third of the whipped cream, smoothing evenly with a spatula. Then layer half of the remaining flat whole wafers close to each other, then one-third more of the whipped cream, then the remaining whole wafers and finally top with the rest of the whipped cream. Garnish the top of cake with the crushed wafers.
- Cover and refrigerate for at least 6 hours.
- Run a paring knife around the springform pan and release the wall of the pan from around the cake. Leave the cake on the bottom of the pan and transfer to a serving dish or cake stand, then slice and serve.

I combined 12 oz of Mascarpone cheese (room temp) with chilled whipping cream. When soft peaks were formed, I added sugar and 2 TBLS clear unflavored gel. Whip to stiff peaks. The cake really held its shape and was creamy and delicious. This cake is always a big hit.
This is fantastic! I remember my mom making something similar to this when I was a kid.
recipe should say to put into the freezer……it did not set up at all, I had a big mess when I took the ring off the pan and through it all away
I made this today & couldn’t wait to have a piece for dessert. I couldn’t believe it would come out firm from the refrigerator like it did on tv. Well guess what! IT DIDNT! I think it’s called Ice Box cake because it should go into the freezer.
I used to make this shaped in a log with chocolate shaved over it and sliced on the diagonal. I have also made it out of thin crisp homemade chocolate chip cookies which everyone really enjoyed. Super easy dessert!
Very simple recipe that everyone seems to enjoy. I’ve always put it in the freezer and I just noticed that the recipe does not say to do that! Not sure why I originally made that assumption but I recommend it.
This recipe is delicious. It’s also very easy to modify to meet your needs. I have left out the powdered sugar and it’s still delicious. I have also used the Oreo thins and they are delicious too!
I’ve made an icebox cake recipe for many years using the Nabisco Famous Waffers and homemade whipped cream. I’ve always laid them out in logs instead of like a pie but this looks good as well. I’ve gotten the cookies as recently as three months ago here in Texas.
This is the first icebox cake I’ve ever made or tasted. I’m almost 61 and all I can say is WOW….. so easy, yummy and fun. My family loved it♥️
I made this with very thin ginger snaps. Also added 1 teaspoon of cinnamon, 1 teaspoon vanilla, and one quarter teaspoon dried ginger to the cream. I know that isn’t a three ingredient dish anymore but this recipe gave me a great place to start. Will try it with other thin cookies in the future!
