Ice Cream Layer Cake

Ingredients

  1. 1 pound cake
  2. 1 cup vanilla ice cream, slightly softened
  3. 4 large peanut butter cup candies, roughly chopped
  4. 1 cup chocolate ice cream, slightly softened
  5. 1/2 cup chocolate candies, such as M and Ms, roughly chopped
  6. 1 cup chocolate chip ice cream, slightly softened
  7. Chocolate shell ice cream sauce (the type that hardens), such as Smucker’s Magic Shell, for covering the top

Instructions

  1. Slice the pound cake horizontally into 3 pieces. Place the first slice in a loaf tin lined with plastic wrap. Cover the cake with the vanilla ice cream, followed by three-quarters of the chopped peanut butter cups. Add a second layer of cake and cover with the chocolate ice cream, followed by three-quarters of the chocolate candies. Place the last layer of cake on top, followed by the chocolate chip ice cream. Cover with the chocolate shell sauce, then the remaining peanut butter cups and chocolate candies. Let the sauce set for a few seconds, then fold over the plastic wrap and place in the freezer until frozen, about 4 hours.
  2. When ready to serve, pull back the plastic wrap, gently lift the cake out and peel off the wrapping completely. Slice to serve.

For those who had trouble with the ice cream disappearing into the cake try freezing the cake after you have cut into layers and wrapping the layers.

Made this for my Dad for his birthday with Ben and Jerry’s Chubby Hubby ice cream and crushed pretzels on top!!! I also made another for my nieces and nephews with cookies and cream and crushed up Oreos!!! Everyone loved it and were so impressed. This cake is delicious! I made this twice in one week. The first time I made it, I softened the ice cream too much and it disappeared into the cake layers-make sure you do not soften the ice cream too much before you spread it on the cake layers. This recipe is now a staple for my husband’s birthday!

This is very good! It was my Granddaughter’s birthday and she loves KitKat’s so I used that for the candy and also bought her favorite ice cream KitKat swirl from Culvers. My ice cream didn’t disappear into the cake like some of the reviews said. The pound cake worked wonderful. It will be so fun to experiment with in the future with different flavor versions. You can use what ever size pan you want just as long as you cut the cake to the sizes you need. Next time I will use Ree’s flavors as I love the kind of ingredients she used. This is a very flexible recipe you can do what makes your tummy happy! Oh, If you have never used the chocolate topping before (like I hadn’t) run it under warm water first and then shake it up. Mine was thick and wouldn’t shake and when I tried to pour it out all I got was clear liquid. As soon  as I warmed it I was able to shake and combine it.

I made this yesterday using a homemade pound cake. After reading the reviews, I used a little more ice cream per layer but still had the same “disappearing ice cream issue” as another reviewer did. It was an easy dessert to make and my family still enjoyed it, but it was disappointing in presentation. A possible way to resolve this problem might be to scoop out the ice cream, form it into rectangles and freeze on a cookie sheet before layering into the cake.
