Dulce de Leche Lava Cakes

Ingredients

  1. Nonstick cooking spray, for the ramekins
  2. 1/3 cup dulce de leche
  3. 4 tablespoons salted butter
  4. 2/3 cup powdered sugar, plus more for topping
  5. 1 large egg plus 1 large egg yolk
  6. 1/2 teaspoon vanilla extract
  7. 1/4 cup all-purpose flour
  8. Vanilla ice cream, for serving

Instructions

  1. Preheat the oven to 425 degrees F. Spray two 6-ounce ramekins generously with cooking spray and place on a baking sheet.
  2. Microwave the dulce de leche and butter together in a medium microwave-safe bowl until the butter is melted, about 1 minute. Whisk until smooth. Stir in the powdered sugar until well blended. Whisk in the egg and yolk, then add the vanilla. Stir in the flour until you have a smooth batter. Divide between the prepared ramekins.
  3. Bake until the edges of the cakes are firm but the centers are still soft, 11 to 13 minutes. Let stand for 1 minute, then run a butter knife around the edges of the cakes and invert onto individual plates while still warm. Sprinkle with powdered sugar and serve with the ice cream.

Just finished devouring the cake. Yes, it’s sweet but nothing like  a good spoonful of whipping cream to balance it out.  This is a keeper!.

Ok so I made this a couple of nights ago and it was amazing!! however a little too sweet.  I will certainly make it again but will have to cut this Lava Cake in half and share the other half…way to sweet for me.

This recipe was quick and simple. Amazing dessert and can be made gourmet fot guest. I also think the type of dule de leche used will make or break the dish. Dont be cheap, get good quality stuff! Its def gonna go in the books for the holidays!

This recipe is perfection because dulce de leche isn’t as sweet as homemade caramel. For a long time I thought they were both similar items but in fact they are totally different one is milk-based the other is sugar-based. It has a nice delicate sweetness though it’s nice that it’s not overbearing.
