Ingredients

  1. Nonstick cooking spray, for the baking pan
  2. One 16-ounce box chocolate cake mix
  3. 1 cup dark chocolate chips
  4. One 14-ounce can sweetened condensed milk
  5. 1/2 cup milk
  6. 1 cup milk
  7. One 3.4-ounce packet instant chocolate pudding
  8. 1/3 cup unsweetened cocoa powder
  9. One 8-ounce container frozen whipped topping, thawed
  10. Maraschino cherries, drained, for decorating (optional)

Instructions

  1. For the cake: Spray a 9-by-13-inch cake pan with cooking spray.
  2. Bake the cake in the prepared pan according to the package instructions. Allow to cool slightly, then, using the handle of a wooden spoon, poke holes all over the cake.
  3. Melt the chocolate chips in a medium microwave-safe bowl in the microwave in 20-second increments, stirring between each, or in a double boiler on the stove, until smooth. Add the condensed milk and milk, then stir to combine. Slowly pour the mixture over the cake, ensuring you hit every last inch. Allow the mixture to soak into the holes while you make the frosting.
  4. For the frosting: Combine the milk, pudding mix and cocoa powder in a bowl. Whisk the mixture until it thickens, 1 to 2 minutes. Gently fold in the whipped topping until combined well.
  5. Spread the frosting over the cake, then decorate with the cherries, if using. Enjoy.

This is a very bitter cake. We don’t like dark chocolate at all but thought the sweetened condensed milk, cool whip, and chocolate pudding would balance out the bitterness of cocoa and dark chocolate and it absolutely did not!!! Do not make this unless you love dark chocolate!!! Ree’s recipes are usually great but this one not so much unless dark chocolate is your thing!

Made the cake this week and gave it to my husband to take to work. His employees loved it! I even got a thank you card. I saved a piece for myself–it’s even better the next day. The only changes I made was to bake the cake in a disposable deep dish 9×13 aluminum pan so that there was room for the topping and still get covered with foil and I sprinkled mini-chocolate chips on top. Looked very festive. I think this will be one of my go-to desserts for potlucks in the future.
