Mug cakes are incredibly simple, yet somewhat revolutionary. They are individual single-serving cakes, great for times when you really crave something sweet, super-fast.

Ingredients

  1. Nonstick cooking spray, for the mug
  2. 1/4 cup chocolate cake mix
  3. 3 tablespoons milk
  4. 1 heaping tablespoon cherry pie filling
  5. 1 small scoop chocolate ice cream
  6. 1 tablespoon bottled chocolate sauce

Instructions

  1. Spray an 8-ounce mug with cooking spray. Add the cake mix and milk to the mug. Mix well with a fork. Top the batter with the cherry pie filling.
  2. Microwave on high for 90 seconds. Let cool for 2 to 3 minutes, then top with a scoop of ice cream and the chocolate sauce.

I took a few liberties with the recipe, but it tasted good anyway. Doing some spring cleaning I found some baking items that were past the BestBy dates. Namely cherry pie filling use by 2019, and a Krispy Items cake mix (2017).
I used a toddler size bowl, put a hefty Tbsp of cherry at the bottom. Mixed together about 1/2 c cake mix, a few slops of milk and mixed well with a plastic fork. Tasted it and decided to add a scant Tb of unsalted butter and two squirts of Hershey syrup. Poured that over the batter. Put it in microwave and gave it 90 sec. Still pudding consistency so I did another 90 sec. Went and washed my utensils so i
Would let it rest the 2-3 min. Took it oyt, added a dollop of cherry and some swirls of hershey.
And it was perfect. Moist cake, with the flavor of my grandma’s homemade cake donuts. And warm cherry !Cobbler style. If you want a picture, its not as pretty as a professional (used my Amazon Tier HD tablet) but desperate times call for desperate measures. I’ve gotten creatively~foodwise, and since becoming disabled I can come up with food shelf meals and no one knows.
